Soft and Chewy Chocolate Chip Oatmeal Cookies

The perfect soft and Chewy chocolate chip oatmeal cookies packed with delicous chocolate chips and hardy oats.

Ingredients
  

  • 1 stick softened butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup oats
  • 1 1/2 cups chocolate chips Use whole 12 oz bag if you love chocolate

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or use a nonstick baking sheet.
  • In your mixer (I like this one) or large bowl, cream together the softened butter and brown sugar for a few minutes until light and fluffy.
  • Beat in the eggs, one at a time, followed by the vanilla extract.
  • Add in the dry ingredients: flour, baking soda, and salt. Mix until just combined, don't overmix.
  • Stir in the oats and chocolate chips or turn the mixer on high for five seconds to evenly distribute the oats and chocolate chips throughout the dough.
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 9-10 minutes, or until the edges are golden brown.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
