In the bowl of the mixer combine warm water, yeast, and sugar. let sit for 3 mins.
Once the yeast is bubbly, add ⅓ cup of melted butter, 2 eggs, ¼ cup of milk. Mix everything together until well combined.
Mix in the Flour: Gradually add 3 1/2 - 4 cups of flour and 1 tsp of salt, mixing as you go. The dough will be slightly sticky, but that’s what makes these rolls so soft and light. Don’t be tempted to add too much flour! (see pic above)
Shape the Dough Here’s a little trick: rub a bit of olive oil on your hands before shaping the dough into rolls. This prevents sticking and makes it easier to handle. Divide the dough into 12-15 equal pieces and shape them into rolls. Place them on a greased baking sheet, leaving just a little space between each one to rise.
Let Them Rise While your oven preheats to 375°F, let the rolls rise near the back of the stove for about 10-15 minutes or until doubled in size. The warmth of the oven will help them puff up beautifully.
Once the oven is preheated, bake the rolls for 20 minutes or until they’re golden brown on top and 190 degrees internally.
Remove the rolls from the oven and let them cool for a few minutes before serving. They’re perfect with a pat of butter, but honestly, they’re delicious enough to eat on their own!
